How to conduct user observations ?

How would you practise user observation in their own environment, as i feel user interviews are insightful, but people think something, say something else and do something else.

The good way of doing this is using contextual inquiry and shadowing tools. 
In these methods, you observe/sketch the client interacting with in his/her space and while doing tasks in habitual way. Using these observation as evidence, asking questions will give better insights and helps you understand the 'how's'. 
Also, you can ask the user to speak out loud while doing the task, gives info about the thinking (understand the why's).

Yes, I do take their consent. I think 'spying' is not just about standing in the corner watching the person but you must merge into environment like pick up some work, start regular conversations etc.,. They will be alert in beginning but as time passes they will merge into their work. Also, your comfort with the environment decides their response.

Hmm basically spying :) Do you take their consent always and does taking consent alter their decision making as they are aware of being watched ?

Users get conscious (they have fear of being judged) while taking the interviews, so using shadowing tools such as fly on the wall, photo journals, guided tours etc., allows the designer to observe users in their comfortable position, not interrupting their flow of actions and more observing less questioning. Limitations : Time taking process, not much efficient in bulk interviews.

Ineresting, but what shadowing tools work on their environment ? & what are the limitations/difficulties on this approach
